About
From producer Nelson Moreno in one of Central America's most unique coffee micro-terroirs. His anaerobically processed Pacas is pulped, sealed in barrels for 80 hours, then left in open-air fermentation tanks for 12 hours before washing and drying on raised beds for 12-13 days. Madcap has sourced from Santa Barbara since 2013.
