About

Produced by Sergio Palermo in the remote town of Chirinos, Peru, near 1900m elevation. Named after the surrounding alder trees, harvested in a cool, misty setting. Sergio makes his own organic compost and uses a unique insulated concrete tank for fermentation due to high-altitude cold temperatures. A 10+ year partnership with Irving Farm.
